Sitka: Nutrition Month dinners

Updated: Paleo dinner has been moved from March 8 to April 19. Paula Veshti is offering three dinner classes focused on healthy eating in Sitka, hosted by the UAF Cooperative Extension Service. Veshti is enrolled in the Dietetics Master’s Program at UAA. This semester, she is providing nutritional services and education to the community through a series of cooking classes. All dinners are 5-7 p.m. Saturday, March 15: Recipes that are targeted for diabetics, pre-diabetics and anyone wanting to learn recipes that manage blood sugar levels. This class will inform people how to balance meals with protein and fiber to control insulin spikes. 3-Day Pesticide Safety Education Program (PSEP) - April 2025

Participating in this three-day PSEP training will help prepare you to become a certified pesticide applicator in Alaska. The training will be offered over Zoom and includes all necessary study materials for the categories of your choice. StrongWomen/StrongPeople Strength Training Program is a progressive strength-training program designed for midlife and older adults by increasing muscle strength and bone density, improving balance and preventing falls. 3-Day Pesticide Safety Education Program (PSEP) - April 2025

Participating in this three-day PSEP training will help prepare you to become a certified pesticide applicator in Alaska. The training will be offered over Zoom and includes all necessary study materials for the categories of your choice. Anchorage: Birch Tapping Workshop

This workshop will introduce birch "sugaring" and will cover where, when, and how to tap birch trees to collect sap. Birch sap is versatile, and can be drunk straight from the tree, used in place of water for beverages, collected and made into carbonated drinks, beer or wine, or it can be boiled down to make syrup. Learn the process of selecting trees and the tools used to tap and set up a collection system. We will also discuss proper storage, ways to use the sap, and the principles of making birch syrup. The instructor, Meg Burgett, began a career with the UAF Cooperative Extension Service in 1986 when she was hired as a seasonal IPM technician. StrongWomen/StrongPeople Strength Training Program is a progressive strength-training program designed for midlife and older adults by increasing muscle strength and bone density, improving balance and preventing falls. Green-up in the Alaska Boreal Forest

Join UAF's Alaska Center for Climate Assessments and Policy for our 6th annual Green-up webinar. Spring in Alaska means important happenings in the boreal forest. Sap starts flowing in birch trees, leading to tapping and the creation of delicious treats. Green-up, when leaves burst forth from Alaska’s deciduous trees, has important implications for the seasonal ecology, society and even meteorology in the state. It is rapidly followed by pollen release, which is a health issue for many Alaskans. Fairbanks has a unique multi-decadal record of green-up dates that’s been used to develop a technique for forecasting green-up and related events in the Interior and more broadly in the boreal forest regions in Alaska. Delta Junction: Bear Awareness & Safety

<p data-pm-slice="1 1 []">This class teaches bear awareness, encounter prevention and appropriate response scenarios. The class will include hands-on use of bear spray (inert), with directed role-play and practice scenarios, and a multi-media presentation. Inert bear spray is provided. It will be led by Tim Craig, a career wildlife biologist with BLM and Fish and Wildlife and has had some remarkable bear encounters over the years. This class will help develop your bear spray muscle memory so you are less likely to respond incorrectly in the event of a real bear encounter. The Delta Junction area has bears – and an encounter is likely more “when,” not “if,” so be prepared.   The class will be held at the Delta Career Advancement Center classroom, 1696 N. Clearwater Ave. Wear clothing and footwear that you don’t mind getting dirty (the spray is oily), and dress in layers as May weather can be unpredictable. There will be a short lunch break. Breakup Triathlon

The race will consist of a 500 yard pool swim, 13.1 mile bike, and 3.1 mile run through and around the UAF campus.  There is a 99-participant limit. Fairbanks: StrongWomen/StrongPeople strength training program

StrongWomen/StrongPeople Strength Training Program is a progressive strength-training program designed for midlife and older adults by increasing muscle strength and bone density, improving balance and preventing falls. The classes are taught by Leslie Shallcross, health, home and family development agent with the University of Alaska Fairbanks Cooperative Extension Service. Light hand and leg weights are available in class. Participants should purchase weights to use at home. Participants will be standing, sitting or on the floor for exercises. Warming things up with plastic, glass and plastic mulch is the ninth of 11 weekly webinars covering the basics of growing vegetables in Alaska. Casey Matney, the Kenai-based agriculture and horticulture agent with the University of Alaska Fairbanks Cooperative Extension Service, will lead the free classes.
